You might get veins on the side, but that's true of cow too. Specifically, white meat is composed mostly of Fast-twitch fibers and dark meat is slow twitch fibers. Fast-twitch are faster, but they fatigue easily. Slow-twitch aren't as fast, but they can go a long time. Dark meat is dark because there is a ton of blood in there to keep glucose going to the cells so that the muscles can work without the buildup of lactic acid. Chickens are not migratory birds. They make short flights using their breast (pectoralis) muscles, so the meat there is white. The same muscles in a Canada Goose (migratory) are dark fibers. Horses have different muscle fiber types, depending what you're eating. Cow too.
